Parlour at QT Sydney

Restaurant Repositioning | Brand Strategy, Concept Development & Project Management

Food, Beverage & Hospitality | QT Hotels & Resorts

The Opportunity

The transformation of the existing Parlour Cucina restaurant at QT Sydney presented an opportunity to reposition the venue within Sydney's competitive dining market, introducing a distinctive new food and beverage concept with a refreshed identity and consumer offering.

The project involved transitioning the restaurant from its original Italian concept into Parlour, an intimate neo-French bistro led by QT's Culinary Creative Director, Chef Sean Connolly.

The challenge was to establish a clear and compelling market position for the reimagined venue, defining everything from its unique selling proposition and target audience to its culinary direction, visual identity and communications strategy, while retaining a connection to QT Sydney's heritage and distinctive brand personality.

The Approach

As Marketing & Communications Manager, I led the brand development and marketing project management of Parlour's repositioning and relaunch, working across internal operational and food and beverage teams, external creative partners and senior culinary leadership.

Working closely with Chef Sean Connolly, I helped shape the restaurant's neo-French bistro concept, including its menu direction, food and wine offering, unique selling proposition and target audience.

I led the development of the venue's brand positioning and key messaging, ensuring a cohesive identity across the guest experience and consumer-facing touchpoints.

This included:

  • Brand strategy and positioning: Defining the venue's USP, target audience, market positioning and key brand messages.

  • Food and beverage concept development: Collaborating with Sean Connolly and F&B teams on the menu concept

  • Creative direction and brand development: Managing external graphic designers and copywriters, overseeing menu design, brand collateral and creative execution.

  • Photography and visual storytelling: Developing the creative brief for photography to establish a cohesive visual identity across marketing channels.

  • Social media and content strategy: Developing the venue's social media strategy and creating content to introduce Parlour and build its presence.

  • PR and launch communications: Working with an external PR agency to bring the venue's new positioning and relaunch story to market.

  • Cross-functional project management: Coordinating internal operational teams, F&B stakeholders and external creative partners to align brand development, marketing activity and launch delivery.

The Outcome

Parlour Cucina was successfully transformed and relaunched as Parlour, an intimate, all-day and late-night neo-French bistro at QT Sydney.

The project delivered a refreshed market position, cohesive creative direction and integrated suite of brand assets, menus, photography, social content and communications to introduce the new concept to Sydney's dining market.

The Impact

The repositioning was supported by a comprehensive launch communications program, delivered in collaboration with an external PR agency, incorporating targeted media pitching and influencer engagement to introduce Parlour's new identity to Sydney's dining market.

The launch secured coverage across leading food, lifestyle and entertainment publications, including Broadsheet, Concrete Playground, Eat Drink Play and Time Out, helping to build awareness of the reimagined venue and its distinctive neo-French offering.

Beyond the launch publicity, the project demonstrated the value of a strategically led approach to hospitality repositioning, bringing together culinary vision, brand development, creative execution and communications to establish a cohesive identity and compelling consumer proposition.
